Chosen by Sandia for its fresh, zingy flavour Dans un Premier Temps pairs perfectly with the rich spice of air-dried loin, the umami of the Truffle Salami, and the fragrant Tellicherry black peppercorns dotted throughout the Brighton Salami. 

Air-Dried Loin: Delicately spiced loin of free-range pork, cured and air-dried for 3 months. Perfect for a charcuterie platter.

The Brighton Salami: Named after Curing Rebels hometown, where it all began. The Brighton salami is Influenced by a classic Italian sausage, richly scented with fennel and fragrant Tellicherry black peppercorns. The original gangster.

Truffle Salami (limited edition): Pork and truffle what not to like! Using respected traditional methods for fermenting, and ageing this special addition salami. Made with free-range pork from Richard Scott's farm at the foot of the South Downs.
