Charles Dufour, BISTRØTAGE Rosé B.11, Extra Brut
BISTRØTAGE Champagnes comes from Charles Dufour’s mother’s vineyards (Domaine Francoise Martinot) in which he is in charge of vinificatation and marketing. This Rose is a saignee rose from 2011 harvest blended with reserve wines from 2010. Semi-carbonic maceration for 21 days, fermented in Burgundy barrels with indegenious yeast. This is a beautiful herbaceous rosé for all those who love natural Champagnes. There’s a slight deliberate oxidation that comes across like dried orange peels, dried violets and freeze dried raspberries.
