Fabrice Pouillon is third generation wine maker for his family estate. The Domaine was founded by his grandfather, Roger, in 1947. They own 7 hectares of vines in Aÿ, Mareuil-sur-Ay, Epernay and Muligny.Winemaking follows family tradition where all grapes are handpicked, uses a traditional wooden press and each of their 36 vine parcels are vinified separately to focus on their origin.All of their wines undergo malolactic fermentation and they only use native yeasts from their clusters of grapes.In 2003 they became officially organic and they also apply biodynamic principles. Their wines are amazingly expressive and always with vibrant aromatics. They have a horse name, Tango, who ploughs their vineyards.
