A. Margaine, L'Extra Brut

This Blanc de blancs comes from three vineyards in Villers-Marmery; Alouettes, Montmedy, Brocots. 30% of this wine is aged in barrels and 100% no malolactic fermentation. It spends 36 months on the lees. This wine has so much energy of lemon peels, camomile, sage and white pepper all effortlessly taking turns jumping off its trampoline made of bright acidity and bubbles. The bit of oak aging adds a lovely texture and keeps the energy contained. Drink this with roast chicken and salad or an unagi don. Only 3,300 bottles made.
