Emmanuel Brochet, Les Hauts Chardonnays, Extra Brut, 2016

The Chardonnay used to make this bottle comes from a little part on the top of Brochet's famous plot 'Le Mont Benoit'. It has been planted in 1962 and only represents 0.34 hectare. It has been aged in oak for 12 months and matured for 6 years on the lies which brings maturity but it will also be the most delicate thing you could drink.
