Stéphane Regnault, Mixolydien no29, Extra Brut

There is a story behind the mysterious name of this cuvée. Before even thinking of becoming a Champagne maker, Stephane was a big musician, and he carries this heritage inside him. He names all his cuvées after a music mode (the set of melodic characteristics and harmonies  that qualifies a song) that resemble the taste of the bottle. Therefore, when you drink Mixolidyen no29, you are basically 'tasting' The Verve 'Bitter Sweet Symphony'.
