Ulysse Collin
Olivier Collin’s family vineyard was originally leased to the famous Pommery Champagne house in a very tight contract. Olivier studied law in hopes to be able to one day legally take back his family vineyard which he successfully did. In early 2000s, Olivier did an apprenticeship with Anselme Selosse. And in 2004, he produced his first vintage from his single vineyard “Les Pierrières”. His wines are always made from single vineyards and are super terroir driven. Like Cedric Bouchard, he believes in firstly making an exceptional still wine and just letting the bubbles bring a little lift.
